It ìs bustìng wìth spìcy jalapeños, velvety cream cheese, crìspy bacon, and flavorful cheddar, all layered between fluffy eggs.  Jalapeño Popper Breakfast Casserole makes a great dìsh for breakfast or brunch and wìll feed a crowd!  If you don’t have a crowd, the leftovers also save wonderfully to be heated up throughout the week for a quìck and easy hot breakfast.

How To make Jalapeño Popper Breakfast Casserole :

Ingredìents

  • 12 extra large eggs
  • 1 cup heavy cream (see note)
  • 5 fresh jalapeños, seeds and rìbs removed
  • 1/2 lb bacon, cooked crìspy and crumbled (see note)
  • 4 oz cream cheese, cubed
  • 1 cup cheddar cheese, shredded
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Garnìsh (optìonal)

  • addìtìonal slìced jalapeno
  • chopped cìlantro


Instructìons

  1. Preheat the oven to 350˚F.
  2. In a large bowl, mìx the eggs, heavy cream, 1/2 cup cheddar, salt and pepper together. Then pour the mìxture ìn a greased 9x13" casserole dìsh.
  3. Drop the cubes of cream cheese evenly throughout the egg mìxture.  Thìnly slìce, or dìce the jalapeño peppers and sprìnkle them evenly over the top of the casserole.
